HI! Long time no see. I don’t blog much, I make good food, but I have very little time to post a lot of it. Plus, really, you’ve seen most of it by now. Here’s a new one I made tonight, from Clean Eating Magazine, that I posted about on my weight loss blog, Loki Eats.

Southwest Cheddar Steak Fries

Ingredients:
1 lb red or yukon gold potatoes, cut into 1/4 inch wedges
1 tbsp EVOO
2 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp granulated garlic
1/4 tsp sea salt
1 oz shredded cheddar (I used pepper jack)
1/2 cup finely minced red bell pepper
2 tbsp finely chopped cilantro (omitted, b/c we know how I feel about that stuff)

Directions:
Preheat the oven to 425 and line a baking sheet with foil (or a silpat). Place the potatoes on the baking sheet and drizzle evenly with the oil and toss to coat lightly. Mix the paprika, cumin, and garlic in a bowl and sprinkle over the potatoes on both sides, then arrange the potatoes in a single layer. Bake in the center of the oven for 10 minutes, then flip and stir, baking for 7 more minutes or until lightly golden brown and tender when pierced with a fork.

Remove from the oven and sprinkle with the cheese, pepper, and salt. Bake for 2 more minutes or until slightly melted. Sprinkle with cilantro and serve immediately.
