These brownies are very very chocolatey and fudgy and delicious. The method for making them is very different than any other method I’d used previously. It seems a little weird and tedious, but it is really good.

When you’re done with these, cut them very small, that’s how rich they are!

Best Cocoa Brownies

Ingredients:

10 tbsp butter, unsalted (I used salted)

1 1/4 cups sugar

3/4 cup plus 2 tbsp cocoa powder, natural or dutch processed

1/4 tbsp salt

1/2 tsp vanilla extract

2 cold large eggs

1/2 cup flour

2/3 cup walnuts or pecans, optional (omitted)

Directions

Line an 8×8″ baking dish with aluminum foil with enough sticking up on each side to create tabs.  Preheat the oven to 325 degrees.

Combine the first 4 ingredients in a bowl that can be placed into boiling water, or use a double boiler. Place bowl or double boiler into simmering water and melt slowly until the batter is too hot to touch. Remove and set aside, allow to cool until warm. Then add the vanilla and 1 egg at a time. Add the vanilla and stir until completely blended.

Spread evenly into the lined pan. Bake for 20-25 min or until a wooden toothpick comes out from the middle slightly moist with batter.

Remove from the oven and allow to cool completely before cutting. Trust me, they need to be cool or they don’t cut well!
